Sweet & Sour Chicken
This colorful, classic Asian dish is easy to make and eat.
2 tablespoons canola or vegetable oil, divided
3 to 4 (20 ounces) Gold'n Plump® Boneless Skinless Chicken Breasts
2 carrots, thinly sliced
1 red bell pepper, cut into 1 1/2-inch by 1/2-inch strips
1 green bell pepper, cut into 1 1/2-inch by 1/2-inch strips
3 green onions (both green and white parts), coarsely chopped
2 cloves garlic, minced
2 cans (8 ounces each) pineapple chunks in their own juice, drained (1/4 cup juice reserved)
3/4 cup bottled sweet-and-sour sauce
Heat 1 tablespoon oil in large skillet or wok over medium-high heat. Add chicken; cook, stirring occasionally, for about 8 to 10 minutes or until lightly browned and thoroughly cooked. Transfer chicken to a bowl; set aside.
Heat remaining 1 tablespoon oil in skillet or wok. Add carrots and bell peppers; cook, stirring frequently, for about 5 minutes or until crisp-tender. Add green onions and garlic; continue to stir-fry for about 1 minute.
Stir together reserved pineapple juice and sweet-and-sour sauce in a measuring cup; add to skillet or wok. Stir in chicken and pineapple; continue to cook for about 1 minute or until thoroughly heated.

1 teaspoon jarred minced garlic may be substituted for fresh minced garlic.
