Sweet Barbecue Chicken Coleslaw
Matchstick carrots add extra color and more crunch to this easy-to-make salad. Serve with corn-on-the-cob and crusty bread.
DRESSING
3/4 cup mayonnaise
2 tablespoons vinegar
2 tablespoons sugar
2 tablespoons barbecue sauce
1 tablespoon prepared horseradish
1 teaspoon celery seed
1/2 teaspoon salt
SALAD
1 Gold'n Plump® Deli Rotisserie Chicken, meat removed and shredded (about 4 cups)
1 package (16 ounce) classic coleslaw mix
1 cup prepared matchstick carrots
1/4 cup finely chopped onion
Stir the dressing ingredients together in a small bowl; set aside.
Stir the salad ingredients together in a large bowl. Stir in the dressing and mix until well blended.
Cover and refrigerate 1 hour to blend flavors.
1 Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.
Any flavor of Gold’n Plump® Deli Rotisserie Chicken may be used.
