Summertime Herb Crusted Chicken
For a great meal on a summer day, serve this with corn relish and the grilled sweet potato wedges.
1 tablespoon all-purpose seasoning blend (a blend of herbs, spices, and garlic is available in the spice section of most supermarkets)
1 teaspoon salt
1 (3-1/2 pounds) Gold'n PlumpĀ® Whole Chicken, cut into 6 to 7 pieces
2 large sweet potatoes, scrubbed and cut into 1/2-inch wedges
3 tablespoons olive oil
Prepare grill. Position grill rack about 6 inches above coals.
Combine herb blend and salt in small bowl. Use your fingers to rub all sides of chicken with mixture.
Place chicken on grill rack to the side of glowing coals. Cover and grill, checking frequently to prevent burning, for about 20 to 25 minutes on each side or until chicken is lightly browned and thoroughly cooked.
Meanwhile, put potatoes in a large bowl. Add oil and toss to evenly coat potatoes.
During last 15 minutes of chicken cooking time, place potatoes over glowing coals. Cover and grill, turning occasionally, for about 12 to 15 minutes or until tender.
Serve chicken with corn relish and warm sweet potato wedges.
For corn relish: Combine 3 tablespoons cider vinegar, 1 tablespoon sugar, and 1/4 teaspoon salt in a medium bowl; stir until the sugar is dissolved. Add 2 cups frozen corn (thawed) and 1/3 cup finely chopped red onion. Prepare the relish up to 1 day in advance and refrigerate in a covered container.
