Spinach Salad with Chicken & Fruit

This summery salad of spinach, chicken, strawberries, and Mandarin oranges is yummy and nutritious.

Ingredients 

1 tablespoon canola oil
1 pound Gold'n Plump® Boneless Skinless Chicken Breast Strips
1 package (10 ounces) salad spinach
1-1/2 cups sliced strawberries
1 can (11 ounces) Mandarin orange segments, drained
4 green onions (green parts only), diagonally cut into 1/4-inch slices
1/3 cup bottled Asian-flavored vinaigrette (such as sesame-soy)
4 teaspoons toasted sesame seeds

Instructions 

Heat oil in large skillet over medium-high heat. Add chicken; cook, stirring occasionally, for about 15 minutes or until lightly browned and thoroughly cooked.

Use a slotted spoon to transfer chicken to plate; set aside to cool for about 5 minutes.

Toss together spinach, strawberries, oranges, and green onions in large bowl. Add chicken and toss again.

Add vinaigrette and toss until evenly combined.

Sprinkle each serving with 1 teaspoon of sesame seeds.

Tips 

The chicken strips for this salad can be cooked earlier in the day and refrigerated in a covered container. Toss the salad with the chicken and vinaigrette just before serving. Serve with meal warm muffins or crusty rolls.
