Southwestern Chicken Fajita Pizza

This pizza is made zesty with chunky salsa and chili powder. A pre-made pizza crust makes it easy to prepare.

Ingredients 

1 tablespoon canola or vegetable oil
1/2 red bell pepper, cut into 1/4-inch strips
1 green bell pepper, cut into 1/4-inch strips
1 small onion, cut into thin slices
3 to 4 (1 pound) Gold'n Plump® Boneless Skinless Chicken Breasts, cut into 1-inch by 1/4-inch strips
2 cloves garlic, minced
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon salt
1 (12-inch) pre-baked pizza crust
1 cup thick and chunky salsa
1/4 cup fresh cilantro or flat-leaf parsley, minced
1 cup sharp Cheddar cheese, finely shredded

Instructions 

Preheat oven to 450°F.

Heat oil in large skillet over medium-high heat. Add bell peppers and onion; cook, stirring occasionally, for about 2 minutes or until crisp-tender.

Add chicken and garlic; sprinkle with chili powder, cumin, and salt. Cook, stirring occasionally, for about 8 to 10 minutes or until chicken is thoroughly cooked and vegetables are tender. Remove from heat.

Place pizza crust on a baking sheet. Spread salsa over crust. Using a slotted spoon, spread chicken mixture over salsa; sprinkle with cilantro or parsley and cheese.

Bake for about 12 minutes or until cheese is melted and crust is crispy and lightly browned.

Variations 

1 teaspoon jarred minced garlic may be substituted for minced fresh garlic.
