Skillet Chicken with Bacon & Apples

This quick sauté takes less than 30 minutes to make, leaving time to get to sit, relax, and enjoy supper. Try chopped fresh pear instead of apple if you have a few in the fruit bowl.

Ingredients 

2 to 3 (1 pound) Gold'n Plump® Boneless Skinless Chicken Breasts
Salt and freshly ground pepper to taste
2 thick slices smoked bacon, coarsely chopped
2 medium tart apples, coarsely chopped
4 green onions, sliced
1/2 cup apple juice
3/4 cup low-sodium chicken broth

Instructions 

Place chicken between two sheets of waxed paper or plastic wrap; lightly pound with a meat mallet or rolling pin to ½ inch thickness. Season with salt and pepper.

Cook bacon in large skillet over medium heat until crisp. Remove bacon from skillet. Add chicken to drippings in pan; cook for about 12 minutes, turning once, until no longer pink in center. Remove chicken from pan; keep warm.

Add apples and onions to skillet; cook 5 minutes or until tender. Stir in juice and broth; cook and stir 5 minutes. Stir cooked bacon into apple mixture.

Serve chicken with apple-bacon mixture.

Tips 

A nice hint of smoky bacon flavor boosts the appeal of just about any dish.
