Orzo with Lemon Pepper Chicken, Snap Peas & Summer Squash
Orzo (also known as rosamarina) is rice-shaped pasta found in the dried pasta section of the grocery store. Coarsely cracked fresh pepper makes a nice addition to this summer-fresh, light entrée.
8 ounces orzo pasta
1/2 pound sugar snap peas, trimmed and halved crosswise
1 yellow summer squash, quartered lengthwise and cut into 1/2-inch pieces
1 (3-1/2 pounds) Gold'n Plump® Deli Rotisserie Chicken, meat removed and coarsely chopped (about 2 cups)
1/4 cup grated Parmesan cheese
3 tablespoons fresh lemon juice
3 tablespoons olive oil
2 teaspoons finely chopped fresh tarragon or 1/2 teaspoon dried tarragon leaves
Bring a large pot of water to boil; stir in orzo. Continue boil, stirring occasionally, for 5 minutes.
Stir in peas and squash; cook for 3 minutes or until orzo is just tender and vegetables are crisp-tender. Drain and return mixture to pot.
Stir in chicken, Parmesan cheese, lemon juice, olive oil, and tarragon.
1 Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.
