Lemon Pepper Chicken & Mango Pitas
Raisins, thawed frozen peas, or chopped peanuts can also be stirred into the filling of this sweet and slightly spicy sandwich.
1/2 Gold'n Plump® Deli Rotisserie Chicken, meat removed and coarsely chopped (about 2 cups)
1 mango, peeled and finely chopped or 3/4 cup jarred mango, well drained and chopped
4 green onions, thinly sliced
2 stalks celery, coarsely chopped
1/2 cup light mayonnaise
1/4 cup purchased mango chutney
1 teaspoon curry powder
2 (6-inch) pita breads
Combine chicken, mango, onions, celery, mayonnaise, chutney, and curry powder in a large bowl; stir just until blended.
Cut pita breads horizontally into two halves and open pockets. Spoon filling into the pockets.
1 Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.
Any flavor of Gold’n Plump® Deli Rotisserie Chicken may be used.
