Lemon Chicken with Cannellini Beans
This skillet-prepared dish of lemon chicken and cannellini beans is ideal for a buffet.
2 tablespoons olive oil, divided
6 to 8 (2 pounds) Gold'n Plump® Boneless Skinless Chicken Breasts
1/2 teaspoon salt
1/2 teaspoon pepper
1 large red onion, thinly sliced
4 cloves garlic, minced
2 cans (15 ounces each) cannellini beans, drained and rinsed
1 teaspoon dried basil
1 teaspoon grated lemon peel
2 tablespoons fresh lemon juice
1/4 cup coarsely chopped fresh flat-leaf parsley
Heat 1 tablespoon oil in large skillet over medium-high heat. Season chicken with salt and pepper. Add half of frozen chicken to skillet; cook for about 4 to 5 minutes on each side or until lightly browned. Use tongs to transfer to plate. Cook remaining chicken for about 4 to 5 minutes on each side, then transfer to plate.
Heat remaining 1 tablespoon oil in same skillet. Add onion; cook, stirring occasionally, for about 5 minutes or until tender. Add garlic; stir for about 1 minute.
Reduce heat to medium. Stir in beans and basil; cook, stirring occasionally, for about 5 minutes or until flavors are blended.
Place chicken breasts on top of bean mixture. Sprinkle with lemon peel and lemon juice.
Cover and cook for about 5 to 8 minutes or until chicken is thoroughly cooked. Just before serving, sprinkle with parsley.
Cannellini beans are large, white Italian kidney beans. In most supermarkets, they can be found either with the canned beans or with the Italian products.
2 teaspoons jarred minced garlic may be substituted for minced fresh garlic.
