Grilled Skillet Nachos
These quick nachos are a fun appetizer to enjoy while grilling other foods with family and friends. Or cook them on the stovetop for an easy afternoon snack.
4 ounces corn tortilla chips
1/2 Gold'n Plump® Deli Rotisserie Chicken, meat removed and shredded (about 1 cup)
1/2 cup chopped plum tomato
1 cup black beans in chili sauce
1-1/2 cups (6 ounces) shredded pepper jack cheese
Sliced pickled jalapeño chiles or ripe olives, guacamole, or tomato salsa, if desired
Heat grill to medium-high heat. Arrange chips in single layer in large cast-iron skillet. Spoon chicken, tomatoes, and beans onto chips. Sprinkle with cheese.
Place skillet on grill. Cover and cook 5 to 7 minutes or until cheese is melted.
Sprinkle with pickled chiles or olives. Serve with guacamole and salsa alongside.
Any flavor of Gold’n Plump® Deli Rotisserie Chicken may be used.
