Grilled Cuban Chicken Sandwich
The spicy chicken, salty ham, nutty-flavored Swiss cheese, and the tangy pickles all blend together for a rich, satisfying sandwich. Serve with spicy black beans and rice and slices of succulent papaya.
1 Gold'n Plump® Deli Rotisserie Chicken, meat removed and sliced (about 4 cups)
2 (1 pound) loaves French bread, each cut into thirds
12 tablespoons softened butter
6 tablespoons deli-style horseradish mustard
12 slices garlic dill pickles
1 pound sliced deli ham
1 pound sliced deli Swiss cheese
Remove and slice 4 cups of chicken.
Slice each third of the French bread loaf in half horizontally. Spread each side of bread with one tablespoon of the butter and one tablespoon of the mustard.
Layer one bread slice with 3 to 4 slices of the chicken, 2 slices of pickle, 2 to 3 slices of ham, and 1-1/2 slices of the cheese. Cover sandwich with one bread slice and press together firmly. Butter the top of the bread.
Heat panini grill to medium. Place sandwich, buttered side down on grill. Butter the unbuttered side of the bread and close the grill. Cook according to manufactures directions until bread is lightly toasted and cheese is melted.
*For easier slicing, refrigerate chicken at least 30 minutes.
To cook sandwich without a panini grill, heat griddle over medium heat. Place sandwich, buttered side down on griddle and top with a heavy skillet, pressing gently to compress sandwich.
