Greek Chicken Orzo Salad
Orzo pasta, or rosamarina, looks like rice but has a nice, tender texture that holds up well in a salad. This is a great do-ahead dish for an easy supper—serve with some toasted pita bread and red grapes.
8 ounces uncooked orzo pasta
1/2 Gold'n Plump® Deli Rotisserie Chicken, meat removed and coarsely chopped (about 2 cups)
1 cup grape cherry tomatoes, halved
1 cup coarsely chopped pitted Kalamata olives
1/3 cup finely chopped red onion
1 jar (12 ounces) marinated artichoke hearts
1 medium lemon
3 cups baby spinach leaves
1/2 cup (2 ounces) crumbled feta cheese
Cook pasta according to package directions; drain well. Meanwhile, place chicken, tomatoes, olives, and onion in a large serving bowl.
Drain artichoke hearts, reserving marinade. Coarsely chop artichokes, add to serving bowl. Grate zest from lemon and squeeze the juice; mix with reserved marinade.
Add cooked pasta and spinach to bowl; pour dressing over and gently toss. Serve sprinkled with cheese.
1 Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.
Any flavor of Gold’n Plump® Deli Rotisserie Chicken may be used.
