Fresh Chicken Cobb Salad
Take advantage of fresh summer corn when tossing up this quick salad, especially if you have any leftover grilled corn-on-the-cob. Garnish the salads with some hard-cooked egg, quartered or sliced, if you have them on hand.
8 cups chopped Romaine lettuce
2 cups chopped Gold'n Plump® Deli Rotisserie Chicken
2 medium tomatoes, cut into wedges
1 large ripe avocado, peeled, pitted and chopped
1/2 cup whole kernel corn
1/2 cup crumbled cooked bacon
1/2 cup Thousand Island or blue cheese dressing
Freshly ground pepper to taste
Arrange lettuce on four plates. Top with chicken, tomatoes, avocado, corn, and bacon.
Drizzle with dressing and season with pepper.
Any flavor of Gold’n Plump® Deli Rotisserie Chicken may be used.
