Deluxe Chicken Salad Melts

There’s nothing easier than mini-melt sandwiches. English muffins are a great base, but try crusty ciabatta rolls, split in half, or wedges of deli focaccia. Pick up a vinaigrette coleslaw or kale salad to serve alongside.

Ingredients 

1/2 Gold'n Plump® Deli Rotisserie Chicken, meat removed and coarsely chopped (about 2 cups)
2 celery stalks, diced (1/4-inch)
2 green onions, finely chopped
1/3 cup light mayonnaise
2 tablespoons mango chutney or apricot preserves
1 tablespoon Dijon mustard
1/3 cup chopped toasted cashews or slivered almonds
4 whole-wheat English muffins, split
4 slices tomato
4 deli slices (4 ounces) Swiss or Muenster cheese, cut in half diagonally

Instructions 

Mix chicken, celery, and onion in medium bowl. Stir in mayonnaise, chutney, mustard, and nuts.

Heat broiler to high heat. Arrange muffin halves, split-side up, on baking sheet. Spoon chicken salad evenly on each muffin. Top each with a tomato slice and ½ slice cheese. Place baking sheet under broiler; broil about 2 minutes or until cheese is melted and bubbly.

Tips 

1 Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.

Any flavor of Gold’n Plump® Deli Rotisserie Chicken may be used.
