Creamy Chicken Cordon Bleu Soup
The ingredients for the classic chicken cordon bleu also make a delicious, hearty soup. Sprinkle with a few snipped chives or chopped parsley, if desired. Serve with caraway rye bread and a Bibb lettuce salad drizzled with bottled vinaigrette.
1 tablespoon butter
1 cup diced (1/2-inch) cooked ham
1/2 cup chopped onion
2 cans (10-3/4 ounce) cream of potato soup
2 cans (about 2-1/2 cups) milk
3 to 4 (20 ounces) Gold'n PlumpĀ® Boneless Skinless Chicken Breasts, chopped
2 teaspoons Dijon mustard
1 cup (4 ounces) shredded Swiss cheese
Melt butter over medium-high heat in a medium saucepan. Add ham and onion. Cook, stirring frequently, for 5 minutes or until ingredients just begin to brown.
Stir in soup and milk; blend well. Stir in chicken and mustard. Bring to a boil, stirring frequently, over medium-high heat. Reduce heat to low and simmer, uncovered, for 5 minutes. Add Swiss cheese and stir constantly until the cheese is melted.
