Cranberry Orange Chicken Breasts

Cranberry-orange relish makes this aromatic chicken dish quick-to-prepare for dinner on a busy night, yet it is also ideal for special occasions.

Ingredients 

1 tablespoon canola or vegetable oil
2 cloves garlic, minced
3 to 4 (1 pound) Gold'n Plump® Boneless Skinless Chicken Breasts
1/4 teaspoon salt
1/4 teaspoon coarsely ground pepper
1/2 cup purchased frozen cranberry-orange relish, thawed
1 teaspoon minced fresh rosemary
1 orange, peeled and thinly sliced, for garnish
1 sprig fresh rosemary for garnish

Instructions 

Heat oil in large skillet over medium heat. Add garlic; stir for about 30 seconds. Add chicken; sprinkle with salt and pepper. Cook for about 4 minutes on each side or until lightly browned and thoroughly cooked.

Meanwhile, stir together relish and rosemary in small bowl. Stir into skillet.

Reduce heat to medium-low; cover and cook for about 1 to 2 minutes or until relish is warm.

As you serve, spoon relish over chicken breasts. Garnish servings with orange slices and rosemary sprigs.

Tips 

If you’re using dried rosemary, enhance the flavor and reduce the splintery texture by crushing the leaves between your fingers just before adding to the recipe. Be sure to finely mince the bold-flavored fresh herb.

Variations 

1 teaspoon jarred minced garlic may be substituted for minced fresh garlic.
