Chicken, Spinach & Strawberry Salad
This colorful salad is great for a quick, light meal.
DRESSING
1 cup olive oil
3/4 cup lemon juice
2 tablespoons lemon pepper
1/4 teaspoon salt
SALAD
4 cups fresh spinach, large stems removed
4 cups mixed greens
4 cups shredded Gold’n Plump® Deli Rotisserie Chicken
4 cups red onion ring halves
4 cups strawberries, cut in half
2 cups honey roasted peanuts
Mix all dressing ingredients in small bowl. Dressing can be portioned into 2 ounce serving cups.
In large bowl, gently toss spinach and mixed greens. To assemble each salad, place 2 cups of mixed greens on serving plate. Top with 3 ounces of chicken, 1/4 cup onion, 1/2 cup strawberries, and 1/4 cup peanuts. Serve with dressing.
One Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.
Any flavor of Gold’n Plump® Deli Rotisserie Chicken may be used.
