Chicken Lucia
Chicken seasoned with oregano and garlic, then broiled to perfection.
1 teaspoon dried oregano
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
2 to 3 (1 pound) Gold'n Plump® Boneless Skinless Chicken Breasts
4 teaspoons butter
Position oven broiler rack 5 inches from heating element; preheat broiler. Lightly coat baking sheet or broiler pan with cooking spray.
Combine oregano, garlic powder, salt, and pepper in a small bowl.
Place chicken in single layer on prepared pan. Sprinkle with half of oregano mixture and top each breast with 1/2 teaspoon butter. Broil for 5 minutes.
Use tongs to turn chicken. Sprinkle with remaining oregano mixture and top each breast with 1/2 teaspoon butter. Broil for 5 more minutes or until chicken is lightly browned and thoroughly cooked.
Serve this chicken with fluffy rice and a green vegetable such as steamed broccoli or green beans.
