Chicken & Crescent Amandine
This special occasion main dish will wow your guests! It's got everything - a creamy and crunchy filling and a beautifully browned almond and Swiss cheese topping.
1 tablespoon olive oil
3 to 4 (20 ounces) Gold'n Plump® Boneless Skinless Chicken Breasts
1 can (10-3/4 ounces) cream of chicken soup
2/3 cup mayonnaise-style salad dressing
1/2 cup sour cream
1 can (8 ounces) sliced water chestnuts, drained
1/2 cup finely chopped celery
1/2 cup finely chopped onion
1 can (4 ounces) sliced mushrooms, drained
1 can (8 ounces) original-flavor refrigerated crescent dinner rolls
2/3 cup coarsely shredded Swiss cheese
1/2 cup slivered almonds
2 tablespoons melted butter
Paprika for sprinkling
Preheat oven to 350°F. Lightly coat a 13” x 9” baking pan with cooking spray.
Heat oil in large skillet over medium-high heat. Add chicken; cook 12 to 14 minutes or until lightly browned and thoroughly cooked. When cool enough to handle, cut into 3/4-inch pieces. Set aside.
Add soup, salad dressing, and sour cream to skillet; whisk until blended. Stir in water chestnuts, celery, onion, mushrooms, and cooked chicken. Cook over medium-high heat until mixture is hot and bubbly. Spoon into prepared baking pan.
Separate crescent roll dough into 2 rectangles. Place over chicken mixture.
Combine cheese, almonds, and butter in a medium bowl. Sprinkle over dough. Dust lightly with paprika.
Bake for 20 to 30 minutes or until crust is golden brown.
