Chicken Caesar Wraps
These tasty wraps put a new spin on a Greek classic.
1 tablespoon olive oil
1 package (10 ounces) Boneless Skinless Chicken Breasts with Rib Meat - Lemon Pepper
4 cups (from a 10-ounce bag) romaine lettuce hearts mix
1/4 cup bottled creamy Ceasar salad dressing
1 cup Caesar croutons
1/4 cup grated Parmesan cheese
4 (10-inch) flour tortillas
Heat oil in medium skillet over medium-high heat. Add chicken; cook, stirring occasionally, for 5 to 6 minutes or until thoroughly cooked. Using a slotted spoon, transfer to plate and let cool.
Toss lettuce with dressing in large bowl. Add chicken, croutons, and Parmesan; toss again.
Stack tortillas and place between 2 damp heavy-weight paper towels. Microwave on high for 30 seconds or until tortillas are warm and pliable. (To warm tortillas in oven, wrap in aluminum foil and place in preheated 350°F oven for 10 minutes.)
To assemble each sandwich, spoon about 1-1/4 cups of salad mixture into center of tortilla. Fold right and left sides of tortilla inward toward center and over filling; next, fold bottom edge upward toward center, firmly roll tortilla away from you until it completely wraps filling. Halve, slicing on angle, before serving.
Serve wraps with bunches of juicy seedless grapes.
Roasted garlic herb or chili lime chicken breasts may be substituted for lemon pepper variety.
