Chicken & Broccoli Slaw Pitas

These sensational crunchy and warm chicken sandwiches are perfect for a quick yet special lunch.

Ingredients 

3 cups packaged broccoli slaw
6 tablespoons bottled vinaigrette salad dressing, divided
1/4 teaspoon pepper
3 to 4 (1 pound) Gold'n PlumpĀ® Boneless Skinless Chicken Breasts, cut into 1-inch pieces
1 Anaheim chili, seeded and chopped
4 pita bread rounds, each cut to form 2 pockets

Instructions 

Stir together broccoli slaw, 5 tablespoons of vinaigrette, and pepper in a medium bowl. Set aside.

Heat remaining 1 tablespoon vinaigrette in medium skillet over medium-high heat. Add chicken and chili; cook, stirring occasionally, about 10 to 12 minutes or until chicken is lightly browned and thoroughly cooked.

To assemble the sandwiches, stuff each pita half with about 1/4 cup of chicken mixture and 1/4 cup of broccoli slaw mixture.

Tips 

As a colorful accompaniment, juicy fruit, such as sliced peaches, nectarines, or plums balances the spiciness of the Anaheim chili pepper.

Variations 

Place chicken mixture inside warmed tortillas and roll for an easy wrap version of this sandwich.
