Barbecue Chicken Stuffed Calzone
These yummy calzones are great for a Saturday lunch. Make it a family affair and have the kids help. Serve with tall glasses of milk and a chocolate chip cookie for dessert.
2 cups coarsely chopped Gold’n Plump® Deli Rotisserie Chicken
2 cups shredded mozzarella cheese
1 cup small broccoli florets
1/2 cup barbecue sauce
1/2 cup coarsely chopped onion
1/2 cup shredded carrots
2 cans (10 ounces each) refrigerated pizza crust
2 tablespoons milk
Stir together all ingredients except pizza crust and milk in a large bowl.
Heat oven to 400ºF. Lightly spray 2 baking sheets with non-stick cooking spray. On a lightly floured surface, spread dough out into a 12x12-inch square. Cut into 4 equal pieces. Spoon 1/2 cup of chicken mixture onto half of each piece of dough. Fold other half of dough over chicken mixture forming a triangle. Crimp edges and brush calzone with milk. Place on baking sheets.
Bake 15 to 20 minutes or until crust is golden brown and filling is hot.
One Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.
Any flavor of Gold’n Plump® Deli Rotisserie Chicken may be used.
