Barbecue Chicken Lasagna
Serve this barbecue lasagna with cornbread, honey, and coleslaw.
2-1/2 cups barbecue sauce
2 cups chicken broth
4 cups coarsely chopped Gold’n Plump® Deli Rotisserie Chicken
2 cups frozen corn
1 cup coarsely chopped onion
12 no-cook lasagna noodles
6 cups shredded mozzarella cheese
2 cups shredded cheddar cheese
Heat oven to 375°F. Lightly spray 13” x 9” baking pan with non-stick cooking spray.
Stir together barbecue sauce and chicken broth in medium bowl. Pour 1 cup of the sauce into the bottom of the pan; set aside.
Stir together chicken, corn, and onion in large bowl; set aside.
Place 4 of the uncooked lasagna noodles in the bottom of the pan over the sauce overlapping the noodles to fit. Top with 3 cups of the chicken mixture and sprinkle with 3 cups of mozzarella cheese. Spoon 1-3/4 cups of the prepared sauce over the cheese.
Place the remaining 4 lasagna noodles over the sauce and top with remaining chicken mixture and sprinkle with remaining mozzarella cheese. Place remaining 4 noodles over the cheese. Spoon the remaining sauce over the noodles. Sprinkle with the cheddar cheese.
Lightly spray a piece of aluminum foil large enough to cover the pan with non-stick cooking spray, place sprayed side down on pan and seal edges
Bake 60 to 65 minutes or until noodles are tender. If desired, remove foil and broil lasagna 6 inches from heat source for 5 minutes or until cheese is bubbly and browned. Let stand 15 minutes before serving.
One Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.
Any flavor of Gold’n Plump® Deli Rotisserie Chicken may be used.
