Peachy Chipotle Grilled Chicken
Chipotle chiles, which are smoked jalapeños, add a smoky heat to a sweet barbecue sauce. Use leftover chipotles to add zip to tomato salsa or a taco filling. Serve this saucy chicken with some grilled fresh peach halves, cornbread, and a baby kale salad.
1/2 cup barbecue sauce
1/4 cup peach preserves
2 chipotle chiles in adobo sauce (from a 7-ounce can), finely chopped
4 to 6 (20 ounces) Gold'n Plump® Boneless Skinless Chicken Thighs
8 green onions, trimmed
Heat grill to medium-high heat. Mix barbecue sauce, preserves, and chiles until well blended; set aside.
Place chicken on grill; cook 20 to 25 minutes, turning once. Begin brushing chicken with barbecue sauce during the last 15 minutes of grilling. Place green onions around the edge of the grill and cook until tender and lightly charred.
Gold'n Plump® Bone-in Chicken Thighs may be substituted for Gold'n Plump® Boneless Skinless Chicken Thighs (increase grill time).
