Patio Chicken with Cherry Tomato Chutney

Serve this saucy chicken with a large spoonful of soft polenta, spiked with fresh corn kernels. If you’ve got a stand of early summer chives in your garden, substitute them for the green onions in the tomato chutney.

Ingredients 

CHICKEN
1 large lemon
3 cloves garlic, finely chopped
3 to 4 (1 pound) Gold'n Plump® Boneless Skinless Chicken Breasts
Coarse salt and freshly ground pepper to taste
TOMATOES
2 cups grape cherry tomatoes, halved
3 tablespoons golden raisins
2 green onions, finely chopped
2 tablespoons brown sugar
1 tablespoon grated fresh gingerroot
1/2 teaspoon red pepper flakes

Instructions 

Heat grill to medium-high heat. Grate peel from lemon; squeeze juice. Mix lemon peel, 2 tablespoons juice (reserve the rest for tomatoes), and garlic in medium bowl or plastic resealable bag. Add chicken; turn pieces to coat with marinade. Marinate chicken for 15 to 30 minutes.

Meanwhile, mix tomatoes, raisins, onions, sugar, ginger, and red pepper in medium saucepan over medium heat. Cook and stir about 15 minutes or until tomatoes are very tender and saucy. Stir in remaining fresh lemon juice.

Remove chicken from marinade (discard); season with salt and pepper. Grill about 10 minutes, turning once, until no longer pink in center. Serve with tomato sauce.
