Grilled Vegetable & Chicken Tostadas
Serve these colorful and healthy tostadas with a squeeze of fresh lime or salsa and a sprinkle of freshly ground pepper. As an alternative to a grill basket, use a small sharp knife, puncture an 18” x 24” piece of heavy duty aluminum foil about every two inches and place on the grill rack to hold the vegetables while grilling.
2 medium zucchini, cut into 1/2-inch slices
2 carrots, cut into 1/4-inch slices
1 medium onion, cut into 1/2-inch slices
1 red or yellow bell pepper, cut into 1/2-inch slices
2 tablespoons olive oil
1/2 Gold'n Plump® Deli Rotisserie Chicken, meat removed and shredded (about 2 cups)
4 (8-inch) flour tortillas
1 package (4 ounces) crumbled feta cheese
Prepare grill for high heat cooking. Position grill rack about 6 inches from heat source.
Combine zucchini, carrots, onion, and bell pepper in a large bowl; toss with 1 tablespoon of oil. Place in a large grill basket and grill, stirring twice, for 12 to 14 minutes, or until vegetables are tender and lightly charred.
Brush tortillas with remaining 1 tablespoon oil and grill, turning once, for 1 to 1-1/2 minutes or until lightly charred.
To serve, arrange 1/2 cup of chicken on top of each tortilla. Top with 1/4 of vegetables and 1/4 of feta cheese. Cut into quarters.
1 Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.
