Spring Chicken Salad
This light, fresh salad is perfect to serve at a bridal shower. Just add a fresh fruit platter and small dinner rolls for an easy but elegant party.
DRESSING
1 cup mayonnaise
2 tablespoons milk
1 teaspoon lemon pepper seasoning
1 teaspoon freshly grated lemon peel
1/2 teaspoon dill weed
SALAD
1 Gold'n Plump® Deli Rotisserie Chicken, meat removed and shredded (about 4 cups)
3 cups cooked rice
1 cup frozen peas, thawed
1/4 cup finely chopped green onion
Stir together the dressing ingredients in a small bowl; set aside.
Stir together the salad ingredients in a large bowl. Stir in the dressing and mix until well blended.
Cover and refrigerate 1 hour to blend flavors.
1 Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.
Any flavor of Gold’n Plump® Deli Rotisserie Chicken may be used.
