Chicken & Asparagus Caesar Salad with Lemony Dressing
Halved grape tomatoes and a sprinkle of freshly ground pepper would be a nice addition to this refreshing twist on a classic salad. Serve with warm, soft bread sticks.
SALAD
2 cups cut (1-inch) fresh asparagus
1 bag (10 ounces) romaine salad (romaine, carrots, and red cabbage)
2 cups coarsely chopped Gold'n Plump® Deli Rotisserie Chicken
1/2 cup Caesar-flavored croutons
1/4 cup grated Parmesan cheese
DRESSING
1/2 cup low-fat mayonnaise
1/4 cup fresh lemon juice
1/4 cup grated Parmesan cheese
1/2 teaspoon minced garlic
Fill a medium-size saucepan half full of salted water; bring to a boil. Add asparagus and return to boil. Reduce heat to medium-high and cook 2 to 3 minutes or until just tender. Drain and place asparagus on a plate to cool slightly.
Whisk together all dressing ingredients in a small bowl.
To assemble each salad, place 1/4 of salad greens on a dinner plate. Top with 1/4 of asparagus, chicken, croutons and Parmesan cheese. Drizzle with 1/4 of dressing.
One Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.
Any flavor of Gold’n Plump® Deli Rotisserie Chicken may be used.
