Chicken & Spinach Lasagna
This cheesy chicken lasagna is filled with chicken, creamy sauce, and tender spinach.
9 uncooked lasagna noodles (from a 16-ounce package)
3 jars (15 ounces each) light Alfredo sauce
3 cups chopped Gold'n Plump® Deli Rotisserie Chicken
3 cups shredded Mozzarella cheese
1-1/2 cups shredded Parmesan cheese
4 cups packed fresh spinach leaves, large stems removed
Heat oven to 350°F. Spray a 13x9 baking dish with nonstick cooking spray. Cook noodles according to package directions. Drain well.
Spoon 1 cup sauce over the bottom of the pan. Stir chicken into remaining sauce. Place 3 noodles over the sauce in the pan. Top with 1/3 of the chicken-sauce mixture. Sprinkle with 1 cup Mozzarella and 1/2 cup Parmesan cheese. Cover cheese with 2 cups spinach. Place 3 noodles over spinach; repeat layers.
Place the 3 remaining noodles over spinach; spread with remaining chicken-sauce mixture. Spray one side of a large piece of foil with nonstick cooking spray; cover lasagna, sprayed side down.
Bake 45 minutes. Remove foil; sprinkle lasagna with remaining cheeses. Bake uncovered 15 to 20 minutes longer, or until light golden brown on top and bubbly around the edges.
Serve with a mixed green salad and fresh fruit.
One Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.
Any flavor of Gold’n Plump® Deli Rotisserie Chicken may be used.
