No Fry Crunchy Chicken
This healthful crispy chicken is baked in the oven rather than fried, quick to prepare, and a beautiful presentation.
2 cups cornflakes, finely crushed
1 teaspoon garlic powder
1/8 teaspoon ground red pepper (cayenne pepper)
1/8 teaspoon black pepper
1/4 cup chicken broth
3 to 4 (1 pound) Gold'n Plump® Boneless Skinless Chicken Breasts
Preheat the oven to 400°F. Lightly coat a baking sheet with cooking spray.
Stir together the corn flakes, garlic powder, red pepper, and black pepper in a shallow bowl.
Pour the chicken broth into a shallow bowl.
Dip the chicken breasts into the broth. Then press both sides into the corn flake mixture.
Place the chicken in a single layer on the prepared baking sheet.
Bake for 20 to 30 minutes or until the chicken is golden brown and thoroughly cooked.
Crush the cornflakes in a zip-seal plastic bag using a rolling pin or the smooth side of a meat mallet.
