Cracker Topped Chicken Casserole

Ingredients 

4 to 6 (2 pounds) Gold'n Plump® Boneless Skinless Chicken Breasts
2 cans (10-3/4 ounces each) cream of chicken soup
1 carton (8 ounces) sour cream
3/4 teaspoon salt
3/4 teaspoon pepper
1/2 cup (1 stick) butter, melted
60 butter snack crackers (about 1-1/2 sleeves of crackers), coarsely crushed
Chopped fresh parsley for garnish

Instructions 

Preheat the oven to 350°F. Lightly oil a 13” x 9” baking pan.

Pour water into a medium sauté pan to a level about 1 1/2 inches deep. Bring the water to a boil over high heat. Add the chicken (it should be covered by about 1/2 inch water) and reduce the heat to medium. Cover and cook for about 8 to 10 minutes or until just cooked through. Drain and discard the cooking liquid. Transfer the chicken to a plate. When it is cool enough to handle, cut into 1-inch pieces.

Combine the soup, sour cream, salt, and pepper in a large bowl. Stir in the cooked chicken.

Spoon the chicken mixture into the prepared baking pan.

Stir together the butter and crackers in a small bowl. Sprinkle over the chicken mixture.

Bake for 45 to 50 minutes or until the sauce is bubbly and the crackers are golden brown. Sprinkle with parsley just before serving.

Tips 

Serve this casserole with green beans. Accompany with warm biscuits to make the meal complete.
