Lemon Pepper Chicken with Summertime Fruit Salsa
A salsa of summery fruits gives this grilled chicken dish lots of color and flavor.
FOR THE SALSA:
2 cups coarsely chopped watermelon
4 kiwi fruit, peeled and cut into 1/2-inch pieces
2 nectarines, peeled and cut into 1/2-inch pieces
2/3 cup finely chopped red onion
4 jalapeno peppers, seeded and minced
1/4 cup minced fresh mint leaves
1/4 cup honey
2 tablespoons fresh lime juice
2 tablespoons rice vinegar
1/2 teaspoon salt
FOR THE CHICKEN:
4 packages (10 ounces) Chicken Breast Tenders
Combine all salsa ingredients in a large bowl. Cover and refrigerate.
When ready to serve, prepare grill. Position grill rack about 6 inches above coals (or heat source). Coat grill rack with cooking spray. Light coals/preheat.
Place chicken on grill rack over glowing coals. Grill for about 4 to 5 minutes on each side or until thoroughly cooked.
To serve, spoon about 1/2 cup of salsa over each chicken breast.
One medium lime yields 1 to 2 tablespoons juice. The salsa may be made up to 8 hours ahead.
Peaches may be substituted for the nectarines. More jalapenos may also be added for more heat.
