Mexican Chicken Tortilla Pizzas
A toasted tortilla crust adds a deliciously crisp texture to this Mexican-style pizza.
1 (8 ounces) Gold'n Plump® Boneless Skinless Chicken Breast
4 teaspoons olive oil, divided
4 (6- or 7-inch) flour tortillas
1/2 cup bottled taco sauce
1/2 cup oil-packed, sun-dried tomatoes, drained and coarsely chopped
1 tablespoon minced fresh oregano
1/4 cup chèvre (fresh white goat cheese)
1/4 cup grated Parmesan cheese
Position oven broiler rack about 5 inches from heating element; preheat broiler.
Heat stove-top grill pan over high heat. Brush one side of chicken breast with oil. Reduce heat to medium-high and place chicken breast on grill, oiled side down. Cook for about 5 minutes. Brush top surface with oil; turn and cook for about 5 more minutes, or until chicken is lightly browned and thoroughly cooked. (If you prefer, cook chicken on a grill.)
While chicken is cooking, brush both sides of each tortilla with olive oil, using about 1/4 teaspoon on each side. Prick surface of tortillas several places with a fork. Place tortillas directly on the oven rack; broil for 1 to 2 minutes on each side, or until lightly browned. Watch closely!
Place tortillas on a baking sheet. Spread surface of each with taco sauce. Cut cooked chicken into 1/2-inch squares. Arrange about one-fourth of chicken and sun-dried tomatoes atop taco sauce on each tortilla. Sprinkle pizzas with dried oregano or basil (if using), dot with goat cheese, and top with Parmesan.
Broil for about 1 to 1-1/2 minutes, or just until cheeses melt. Watch closely! If using fresh oregano or basil, sprinkle atop each pizza after broiling.
1 tablespoon basil or 1 teaspoon dried oregano or basil may be substituted for minced fresh oregano.
