Grilled Chicken Fillet Sandwich with Garlic Mayonnaise
Aîoli is garlic-flavored mayonnaise from the Provençe region of southern France. This quick-to-prepare version offers both its flavor and aroma when spread on these gourmet chicken sandwiches.
1/3 cup chili sauce
1/4 cup + 1 tablespoon fresh lemon juice, divided
3 to 4 (1 pound) Gold'n Plump® Boneless Skinless Chicken Breasts
4 slices bacon
1/2 cup reduced-fat mayonnaise
1 tablespoon Dijon mustard
2 cloves garlic, minced
4 crusty rolls
4 leaves lettuce
1 tomato, sliced
Combine chili sauce and 1/4 cup of lemon juice in a zip-seal plastic bag. Add chicken and seal bag. Refrigerate, turning bag occasionally, for at least 30 minutes or up to 24 hours.
When you are ready to cook, prepare grill. Position grill rack about 6 inches above coals.
Meanwhile, cook bacon according to package instructions until crisp. Transfer to a paper towel-lined plate and set aside to cool. Cut each bacon slice in half crosswise.
Stir together mayonnaise, mustard, garlic, and remaining 1 tablespoon lemon juice in a medium bowl. Set aside.
Place chicken on grill rack over glowing coals. Grill for about 3 to 4 minutes on each side or until lightly browned and thoroughly cooked.
To assemble each sandwich, spread cut sides of roll with 1 tablespoon mayonnaise mixture. Layer bottom half with a lettuce leaf, tomato slice, a chicken breast, and 1 slice of bacon. Add top half of roll.

1 teaspoon jarred minced garlic may be substituted for fresh minced garlic.
