Easy Chicken Satays with Peanut Sauce

These easy appetizers are simply chicken on sticks served with a premade peanut sauce for dipping.

Ingredients 

3 to 4 (1 pound) Gold'n Plump® Boneless Skinless Chicken Breasts
1 tablespoon lime zest
1/2 cup bottled peanut sauce

Instructions 

Position oven broiler rack about 5 inches from heating element; preheat broiler. Lightly coat a baking sheet with cooking spray.

Slice each chicken breast lengthwise into 6 strips

Thread strips onto 12 presoaked bamboo skewers, weaving chicken in and out so pieces extend nearly full length of the skewers. Place skewers in single layer on prepared baking sheet.

Broil skewered chicken, turning half way through, for about 6 to 8 minutes or until chicken is lightly browned and thoroughly cooked.

Transfer skewers to a serving plate and sprinkle chicken with lime zest.

Accompany with a bowl of peanut sauce for dipping.

Tips 

You’ll need twelve 6-inch bamboo skewers for this recipe. To prevent them from burning and darkening under the broiler, soak bamboo skewers in water for 30 minutes before threading on the chicken. When serving, drizzle the peanut sauce over the chicken to give it an extra kick. Accompany this dish with Stir-Fried Rice and blanched snow peas.

Variations 

To serve as a main course for six, double the recipe in order to allow 4 skewers per serving.
