Apricot Spiced Grilled Chicken

A sweet and spicy apricot-based glaze imparts delicious flavor and aroma to traditional grilled chicken.

Ingredients 

4-1/2 pounds Gold'n Plump® Chicken Leg Quarters
1 cup dried apricots, finely chopped
1/4 cup fresh cilantro or flat-leaf parsley, minced
1 anaheim chili, seeded and chopped
3/4 teaspoon salt, divided
2 tablespoons hot pepper oil or chili oil
1/2 teaspoon pepper
4 tablespoons fresh limeade concentrate, thawed

Instructions 

Prepare grill for medium indirect heat. Position grill rack about 6 inches above coals.

Stir together apricots, cilantro or parsley, chili, and 1/4 teaspoon of salt in a small bowl.

Using your fingers, loosen skin from a chicken thigh. Carefully insert about 1/3 cup of apricot mixture under the skin. Repeat with remaining chicken.

Rub chicken with oil; sprinkle with remaining 1/2 teaspoon of salt and pepper.

Place chicken on prepared grill. Brush with about 2 tablespoons of limeade. Cover and grill for 15 minutes. Brush with remaining limeade. Cover and continue grilling for about 25 to 35 minutes or until chicken is thoroughly cooked and there is no hint of pink in meat.

Tips 

When grilling the chicken for this recipe, it’s best to use indirect heat because the sweet glaze may burn over high heat. Serve with quick-to-prepare Couscous with Sesame-Orange Dressing or Rice and Spinach Salad with Asian Vinaigrette.

 

Variations 

1 teaspoon jarred minced garlic may be substituted for freshly minced garlic.
